Clover is a herbaceous plant belonging to the Fabaceae family. It is widespread in pastures, where it represents an important source of nourishment for livestock, but it is also used in crop rotations for the regeneration of the land. Among the most interesting species for beekeeping are white clover (Trifolium repens), crimson clover (Trifolium incarnatum) and Alexandrian clover (Trifolium Alexandrinum). The period of maximum flowering occurs from late spring until late summer, approximately from April to July.
Thanks to clover it is possible to obtain a honey with excellent qualities. The color of this honey is extremely light, tending towards white; when it crystallizes it becomes a dirty white color. Crystallization occurs in a very regular way and with a rather fine grain.
The flavor and aroma are delicate and have a vegetal and floral note, making it suitable for use as a sweetener.
