Our citrus honey is produced between April and May in the citrus groves of the Ionian coast of Puglia. Here, bees collect nectar mainly from orange and clementine flowers. Every year, when we take our hives to the citrus groves, we are captivated by the scent of zagara (orange blossom), a sensation that we relive when tasting the honey that comes from it.
The color of citrus honey is very light: from almost colorless to straw yellow when liquid; from white to light beige when crystallized. The aroma is citrusy and the taste is sweet, fruity.
All the processing phases of our honeys take place cold, in order to maintain their properties unaltered: after mechanical honey extraction, the honey is filtered to eliminate wax residues and left to decant for about 15 days. At this point, the honey is ready for bottling.
Citrus honey is suitable not only for the preparation of desserts, but also in combination with cheeses and fish and meat dishes.
