We produce thyme honey along the coast of Ostuni (Puglia) on the fossil dunes behind the dunes. The precious and spontaneous shrubs of this plant (Thymus capitatus) give a honey that is not very sweet, with a salty aftertaste and a floral and spicy aroma.

Thyme honey

Our thyme honey is produced in the summer along the Ostuni coast (province of Brindisi) on the retrodunal fossil dunes, arid environments that allow the survival of a few plants including Thymus capitatus.

The thyme plant has balsamic and expectorant properties that calm coughs and help heal winter illnesses. These properties are also found in honey.
Organoleptic characteristics

The aroma of thyme honey is floral and spicy, reminiscent of aromatic wood, mulled wine and cloves.

The taste is pleasant, the sweetness is medium with an aromatic flavor that remains persistent in the mouth and ends with a balsamic and salty aftertaste.

The color is amber with a tendency to become brown. With time and the lowering of the temperature the honey crystallizes into a fine grain with an irregular consistency, but this process occurs very slowly thanks to the presence of a lot of fructose.
Processing process

All the processing phases of our honeys are carried out cold, in order to maintain their properties unaltered: after mechanical honey extraction, the honey is filtered to eliminate wax residues and left to settle for about 15 days. At this point the honey is ready to be bottled.
Pairings

Thyme honey can be used to sweeten herbal teas and hot drinks, but only when they reach the right temperature to be sipped in order not to lose their healthy properties due to the high temperatures.

It can also be used in combination with mature and spicy cheeses.
